Ingredients

  • 2 cans crushed tomatoes (14 oz each)
  • 1 medium onion, diced
  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 tsp dried basil
  • 1/2 tsp oregano
  • 1 cup heavy cream
  • 20 oz cheese tortellini
  • Salt and pepper to taste
  • Optional: parmesan cheese, fresh basil

Instructions

1. Dice onion and carrots, mince garlic.

2. Add tomatoes, broth, onion, carrots, garlic, basil, oregano, salt, and pepper to crockpot.

3. Cook on LOW 6–7 hours or HIGH 3–4 hours.

4. 30 minutes before serving, add heavy cream and tortellini.

5. Cook on HIGH for 30 minutes, stirring occasionally.

6. Taste and adjust seasoning; garnish and serve.

Notes

  • For a smoother texture, use an immersion blender before adding cream and tortellini.
  • Freeze tomato base only; add tortellini and cream when reheating.
  • Use gluten-free or dairy-free alternatives as needed.
