A cozy, one-pot Crockpot Lentil Soup loaded with hearty lentils, fresh veggies, and warm spices. Gluten-free, vegan, and freezer-friendly.

Ingredients

  • 1 ½ cups dry brown lentils, rinsed
  • 1 medium yellow onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • ½ tsp oregano
  • 1 tsp salt (or to taste)
  • 1 can (15 oz) crushed tomatoes
  • 4 cups vegetable broth
  • 1 tbsp balsamic vinegar (or lemon juice)

Instructions

1. Add onion, carrots, celery, and garlic to the bottom of a 6-quart crockpot.

2. Add lentils, crushed tomatoes, vegetable broth, thyme, oregano, and salt.

3. Stir gently to combine all ingredients evenly.

4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

5. Before serving, stir in balsamic vinegar or lemon juice.

6. Taste and adjust seasoning as needed.

7. Serve warm with fresh herbs, crusty bread, or your favorite garnish.

Notes

  • Use green lentils for a firmer texture or red lentils for a softer consistency (shorter cook time).
  • Store leftovers in the fridge for 4 days or freeze for up to 3 months.
  • Add chopped kale or spinach in the last 15 minutes for extra fiber.
