Creamy, chocolate-covered Keto Ice Cream Bars with only 3g net carbs each—perfect for hot days and sweet cravings!

Ingredients

  • 1 cup heavy cream
  • ⅔ cup unsweetened almond milk
  • ¼ cup erythritol or monk fruit blend
  • 2 tsp vanilla extract
  • 200g sugar-free dark chocolate
  • 1 tbsp coconut oil

Instructions

  1. Heat cream, almond milk, sweetener, and vanilla in a saucepan.
  2. Chill the mixture in the fridge for 2 hours.
  3. Pour into molds and freeze 4+ hours.
  4. Melt chocolate with coconut oil.
  5. Dip frozen bars into chocolate and freeze again.

Notes

  • Store in an airtight container in the freezer up to 2 weeks.
  • You can add crushed nuts or coconut before the chocolate sets.
